Expectations
In this and all
future modules and lessons, you will be expected to:
- Define, comprehend and use
culinary terms effectively;
- Practice organizational and
preparation (mise en place)
techniques as part of commercial food preparation;
- Demonstrate safe and
sanitary practices in food preparation;
- Demonstrate and apply the
principles and procedures related to controlling the causes of food
spoilage and food-borne illnesses;
- Demonstrate an
understanding and acceptance of the generally accepted standards of
professionalism;
- Adhere to the established
dress code.

You will
be e-mailed these documents. Read your
syllabus, sign the “student agreement” and turn it in on the
first day of class.
Risk and Release Form

Download the Risk and Release form, fill it out,
print, sign and date, and turn it in to your instructor on the first day of
class.
What
role does food play in your life?
During
the first day of class be prepared to discuss the role of food in your
life.You will also be required to turn in a computer generated, written scenario
of your presentation that day.
Email
Communicating with your
instructor will be critical to your success in this course. Email will play a
large part of the communication that occurs. All email correspondence from
your instructor to you will be through your UH Email account. Use your UH
Email account to send messages or respond back to your instructor.
